Saturday Chef: Strawberry Shortcake

I had some strawberries laying around today so I decided to chef up something good. I love the weekends because I have time to cook lunches, dinners, and treats like this Strawberry Shortcake.

This is a recipe I learned from my mom. You make biscuits and then put mashed berries (with a little sugar) on top. It’s simple but an o’so yummy summer treat.

*Normally, we use Bisquick to make the biscuits for strawberry shortcake, but the only thing I had on hand was Hungry Jack. Hungry Jack doesn’t have the same texture or flavor of Bisquick, so I would stick with Bisquick next time.

I saw these little red strawberries at the store and I couldn’t pass them up. Little berries always have better flavor. I need to invest in a biscuit cutter like this one: http://www.williams-sonoma.com/products/biscuit-cutter/. (It also doubles for a handy strawberry smasher).

I cooked the biscuits at 400 degrees for 7 minutes. A dash of sugar, and your strawberry shortcake is all set to enjoy! Do you have a strawberry shortcake recipe you love? If so, please share in the comments below!
